Tait Farm Foods

Kim K. Tait calls herself a "Stewardess of the Land," and justifiably so! As president of Tait Farm Foods, she produces some of the best specialty food products in the country and runs a year-round Harvest Shop and Greenhouse, specializing in local foods and seasonal produce, fresh herbs and flowers. She also has a Community Supported Agriculture (CSA) project which provides over 125 families with certified organic vegetables and fruits.

The Tait Farm in Centre, Pennsylvania (it is indeed in the center of the state) has been in the family since 1950 when Marian and Elton Tait, purchased it after graduating from Penn State University. Elton went on to work for the Agriculture Extension Service at Penn State for 39 years. In addition to raising their three children on the farm, the Tait's also had hobby crops of livestock, Basset Hounds and Christmas trees.

The farm and its value-added food business have stayed in the family and have grown over the years. John Tait raises Christmas trees and Basset Hounds, and Kim Tait runs the vibrant Tait Farm Foods.

Some of the most unique products from the company are its Fruit Shrubs. The word "shrub" comes from the Arabic word "sharab," which literally means to drink. In the dictionary, shrub is defined as an acid fruit drink. Tait's Fruit Shrubs are based on Colonial era recipes and are drink concentrates made with fresh fruit vinegars, unbleached cane sugar, honey and spices. They can be mixed with sparkling water (1 part Shrub to 8 parts water) to make festive non-alcoholic drinks, also to flavor wine and champagne, or used as an ingredient in many delicious dishes ranging from fruit salsas to desserts and salad dressings. Of contemporary historical significance, Tait's Fruit Shrubs are served at many historical sites including Colonial Williamsburg and The City Tavern Restaurant in Philadelphia.
